RAW Vegan Taco Platters (with Mock Taco Meat)

Greetings Everyone!

So the past couple of days I've shared the raw plant based/vegan NOT-cho Cheese, NUTS-A-Rella Cheese and the Raw Vegan Taco Meat...just in case you guys were wondering what I do with them, here's a couple of ideas for you...

Taco Salad
A huge Taco Salad is an option. I used a simple romaine lettuce for the bottom, then topped with a lot of NUTS-A-Rella Cheese, threw some diced tomatoes, jalapeno peppers and a good scoop of the Raw Vegan Taco Meat on top, then put a few pieces of avocado around it. Really that was all that was needed, but if you want to throw something else in there, feel free...its a salad, it should be fun! It didn't need any dressing, because the cheese took on the dressing feel once it was in there and mixed up with the other ingredients. It all tasted simply wonderful! Try this, its filling and very good.

Taco Boats
For less of a "salad" feel, another option are these lovely taco boats. For this one, I simply took a whole romaine lettuce leaf, loaded it with NOT-cho Cheese then put some tomatoes, avocado and sprinkled a lot of Raw Vegan Taco Meat on top...and...BAM! I had these wonderful little taco boats.

These ideas are quick and simple to make in a pinch. I already had the two different cheeses in the fridge, all I had to do was dice up the ingredients and assemble. Implementing a plant based diet can be as simple or as complex as you want it to be. Yes some meals are time consuming, but for the most part, many are not. You can get plenty variety simply by mixing and matching. You'll be surprised how different the taco salad tasted from the taco boats, simply because of the very different taste with the choice of cheeses used.
