Chunky Monkey Icecream-RAW VEGAN |
This is one of the simplest ice creams you will ever make! When I discovered that bananas (YES BANANAS) can make ice-cream, I went absolutely bananas! It was this time last year that I discovered this little treat! I remember thinking, "Wow! All those years, I've been downing unnecessary pints of calories from Ben & Jerry's! When all I needed to do was puree a little banana!?!?!" So here's what I did...
INGREDIENTS
- 2 frozen bananas
- 1-2 tbsps coconut milk (as needed)
- 1/2 tsp vanilla extract (non-alcoholic)
- pinch of cinnamon
- raw walnuts (to taste-pre-soaked and dehydrated)
- raw cacao chips or vegan chocolate chips (to taste)
To Make The Icecream
Take the bananas and blend in your Vitamix Blender with your vanilla extract and cinnamon while pouring in a lil coconut milk at a time, just to allow the mixture to blend thick and creamy.
Put in regular bowl (no icecream maker necessary) and fold in raw organic walnuts and raw organic chocolate chips.
This is ready to eat, no need to put it in the freezer to set, but if you do freeze it, it doesn't hurt. This is so good you won't believe its not dairy and all the fat is healthy fats!
This treat is loaded with omega 3's, antioxidants, potassium, protein and various other vitamins and minerals. I hope you enjoy this as much as I do!
