Raw Vegan Mayo |
INGREDIENTS
- 1 cup raw sunflower seeds (pre-soaked)
- 1/4 cup of organic apple cider vinegar
- 1 large garlic clove
- 1 tsp celtic sea salt
- 2-3 tbsp raw blue agave
- 1 tbsp parsley
- 1 tbsp oregano
- 2 tbsp nutritional yeast
- 1/4 - 3/4 cup water (as needed)
Makes about 16-20 oz
Put everything in your your Vitamix and blend. Yep it's that simple! Pour it in a bowl or a squeeze bottle and serve!
TIP:
(1) Slowly add the water, so that your mayo has the consistency of thickness you desire. Remember! When you refrigerate this, it will thicken.
(2) If you like more of a twang to your mayo...add more apple cider vinegar.
(3) Because this is raw and fresh ingredients are used, the shelf life is not the same as with normal mayo. Lifespan is about a week refrigerated. It may last longer, but I believe due to the apple cider vinegar, it may ferment more and take on a different taste as more time progresses. I typically make this and use it up within a couple of days.

Still think eating raw is hard? I told you it was simple and easy. You just made mayo! I mean you can put this in salads, on raw bread and make sandwiches or use it as a dip!
