Flax Bread

Flax Bread
INGREDIENTS
  • 2 Red Delicious Apples (peeled)
  • 1 tbsp raw organic extra virgin coconut oil
  • 1.5 cups of ground flax
  • ¼ cup of water

 Making the Flax Bread
  • Put ingredients into a food processor and mix it together until it forms a dough texture.
  • Line your dehydrator with parchment paper. (optional-I do this for easy clean up)
  • Spread evenly in Dehydrator.  (flip when half way done and remove the parchment paper)
  • Dehydrate until its ready.
  • Total dehydration time will vary based on thickness of bread and type of dehydrator used. I usually allow it to dehydrate for about 12-18 hours.

Bob's Red Mill Product Review and Giveaway

Greetings Everyone!

Let me just tell you, when I first started implementing raw foods into my diet, I started learning rather quickly how to shop around for "deals". Mini Raw Vegan Chocolate Chip Cookie Dough Cheesecake

Mini Raw Vegan Chocolate Chip Cookie Dough Cheesecake
INGREDIENTS
  • ½ cup raw organic cashews
  • 4 raw vegan chocolate chip almond oatmeal cookies
  • 1 pinch of himilayan salt
  • ½ tsp organic vanilla extract
  • 1-2 tbsp(s) raw blue agave
  • 3 large medjool dates (pitted and soaked for at least 5 hours)
  • 1 lemon (peeled)
  • 2 tbsp coconut oil
  • ¼ cup water (I used the same water that I soaked the dates in)
  • Chocolate Sauce (optional)

Making the Cheesecake
  • With the exception of the cookies, put everything into your Vitamix. Blend until creamy and smooth. *go ahead, give it a taste…I know you’re just dying to* 
  • Take your mini (4 1/2 inch) spring-form pan. Take 2 of the cookies and mash them into the bottom. This will be your crust. 
  • Pour the cream cheese filling half way in. Take the one of the cookies and break tiny pieces off and blend it into the bottom half. Put more pieces on top. Pour the rest of your cream cheese filling on top. 
  • Take the other cookie and form into tiny balls and put around the base of the cheesecake. Form the rest of the broken cookie into a bigger ball and place it in the center. 
  • Drizzle Chocolate Sauce on top. 
  • Put in the freezer to set for at least 8 hours. Try not to eat it all in one sitting! (once you taste it, you’ll see why I made it a “mini” cheesecake instead of a large one. It's decadently delicious, but because of the nuts in this, you get full fast. This should feed 4.)
 
It pays to make treats and set some aside in the freezer. The crust was made from raw vegan cookies I made a while back and I drizzled chocolate sauce over it that I had in the fridge.

Chocolate Coconut Truffles

This raw vegan treat took me less than 5 mins to make. I used left over nuts I had soaking and a little bit of the Chocolate Lover's Sauce that was already pre-made. Funny how when you make some things and put it in the fridge, it comes in handy later.

INGREDIENTS
Making the Chocolate Coconut Truffles
In a food processor put the nuts and 1/2 cup of coconut flakes, chop them fine, pour in the chocolate sauce, mix a little then scoop out and form into balls. Then take the other half cup of coconut flakes and roll the balls in them. I like to do this cause they are sticky and this helps to not have that sticky feeling on your fingers when you're eating them. 

TIP:
If you don't want to use coconut flakes, try using chopped almonds, walnuts or pecans...have fun with it...and switch it up!

I really just threw this together at the last minute...hope you like it.

Brownie Bites (Raw Vegan)

Brownie Bites
INGREDIENTS
  • 1 cup raw organic walnuts (presoaked)
  • 1 cup raw organic pecans (presoaked)
  • 3 tbsp raw organic honey
  • 1/2 cup raw cacao powder
  • 1 cup raisins (presoaked)
  • 5 medjool dates (presoaked)
  • 1 tsp mesquite powder
  • 1 tsp carob powder
  • 1/4 to 1/2 cup water
  • Chocolate Sauce (optional)

Making The Brownies
Put all of the ingredients (except for your chocolate sauce) into  your Vitamix blender and blend. You should blend until the consistency is thick like brownie batter. Line your brownie pan with wax paper (this is optional--I lined mine, because these brownies are sticky and I wanted easy removal)...put on the wax paper in the pan---spread evenly in the pan...put in freezer to set over night or for at least 8 hours.

After the brownies set, you can put chocolate icing on top (again, this optional). 

TIPS: 
(1) You can put these brownies into mini cup cake holders and freeze them.
(2) You can dehydrate these brownies. Dehydration time may vary, but I've dehydrated them at 105 for 24 hours and they were still moist, but not as sticky on the outside.

Raw Vegan-Chocolate Chip Oatmeal Cookies

Raw Vegan-Chocolate Chip Oatmeal Cookies


When I first started implementing raw foods into my life. I realized that I would have to give up certain foods. I give a special thanks to my Soul Sistah, Joanne Gero, over at Vibe Alive. This lady taught me that I don't have to give up the good foods I love. Here's one of her recipes...I've altered it quite a bit...but the original comes from Vibe Alive.
Recipe inspired from: Vibe Alive

INGREDIENTS
  • 1 cup raw organic almonds (soaked & dehydrated)
  • 1 cup organic oats or oat groats (dry, grind into powder)
  • ½ cup organic shredded coconut
  • 15 organic medjool dates
  • 3-4 tbsp raw honey
  • 1 tbsp mesquite powder
  • ¼ cup raw organic blue agave (optional)
  • 1.5 tsp vanilla extract (non-alcohol)
  • ¼ tsp Pink Himalayan or Celtic Sea Salt
  • ½ cup of raw organic cacao chips
  • ½ cup water (as needed)


MAKING THE COOKIE DOUGH  
  • Process in your dry blade Vitamix blender the raw organic almonds. It should turn into a powder…I didn’t let it get too fine, but don’t let it get oily—you’re not making almond butter.
  • Process in your dry blade Vitamix the organic oats. This should be a powder form. 
  • Pour almond powder and oat powder into bowl.
  • Mix with shredded coconut and salt. 
  • In Vitamix blender, put the dates, honey, water (as needed), vanilla extract and mesquite powder. This makes your liquid mixture.
  • Pour your liquid mixture into bowl. 
  • Mix with hand or spoon. 
  • I mix by hand and I fold in the raw cacao chips once everything is mixed together and the dough is formed. 
  • After the raw cacao chips are added, then I added the raw organic blue agave, just to kick the sweetness up a knotch! 
  • Form into desired cookie size.
  • Refrigerate for at least an hour. Refrigerator life is about 4-5 days, if they last that long. 
TIPS: 
(1) Remember raw organic cacao chips are not like nestles over processed sugar chips these are pure so they are bitter, you want your dough to be sweet to counter act the bitter chips. Trust me, you won’t even notice the bitter taste of the chips if you do this.
(2) Those of you who are allergic to nuts, take out the almonds and substitute for an additional cup of oatmeal or be risky and try flax meal...I'm willing to bet that will be just as delish!
(3) Put half of this in the freezer. These make awesome last minute treats, when you don't feel like making anything...and it doesn't take long to thaw.
(4) Substitute the raw cacao chips with raisins...and you have raw vegan oatmeal raisin cookies.

Raw Vegan Chocolate Lovers Sauce
INGREDIENTS
  • 1/2 cup raw organic cacao powder
  • dash of cinnamon
  • dash of nutmeg
  • 1 tbsp coconut oil
  • 1 1/2 cups of raw organic agave
  • 1 tsp of mesquite powder (optional) 

Blend in your Vitamix blender until smooth. You can eat it right out the blender or let it sit in the refrigerator and it will thicken. 

Be careful its addictive!

TIP:
The mesquite powder adds a caramel flavor. Only add it if you want that flavor.

Fruit & Ice Cream Parfaits (Raw Vegan)

Fruit & IceCream Parfaits (RawVegan)
  • INGREDIENTS
  • 2 frozen bananas
  • 1 dash of vanilla extract
  • a dash of cinnamon
  • almond milk (optional)
  • mixed fruit (of your choice)
  • Sprinkles: (optional)
      • 1/4 cup shredded coconut
      • 2 tbsp raisins
      • 1/4 cup raw cashews /or/ raw almonds (pre-soaked and dehydrated) 
Prep: raw cashews, shredded coconut and raisins in food processor. Blend them all together until nuts are fine, this is your sprinkle

Put both frozen bananas in the Vitamix blender, put a dash of vanilla extract and cinnamon on them, a dash of almond milk (optional-i do this to just make it smoother) blend until creamy.

Chop up your fruit of choice. I used strawberries, pineapples, cherries and blueberries at the very bottom put in your banana mixture, put the sprinkles on top, top with fruit, repeat until all gone!

This was surprisingly good and so quick to make! This came in handy for a nice little late night sweet treat.

Raw Vegan Chunky Monkey IceCream

Chunky Monkey Icecream-RAW VEGAN
This is one of the simplest ice creams you will ever make! When I discovered that bananas (YES BANANAS) can make ice-cream, I went absolutely bananas! It was this time last year that I discovered this little treat! I remember thinking, "Wow! All those years, I've been downing unnecessary pints of calories from Ben & Jerry's! When all I needed to do was puree a little banana!?!?!" So here's what I did...

INGREDIENTS
  • 2 frozen bananas
  • 1-2 tbsps coconut milk (as needed)
  • 1/2 tsp vanilla extract (non-alcoholic)
  • pinch of cinnamon
  • raw walnuts (to taste-pre-soaked and dehydrated)
  • raw cacao chips or vegan chocolate chips (to taste) 
To Make The Icecream
Take the bananas and blend in your Vitamix  Blender with your vanilla extract and cinnamon while pouring in a lil coconut milk at a time, just to allow the mixture to blend thick and creamy.

Put in regular bowl (no icecream maker necessary) and fold in raw organic walnuts and raw organic chocolate chips.

This is ready to eat, no need to put it in the freezer to set, but if you do freeze it, it doesn't hurt. This is so good you won't believe its not dairy and all the fat is healthy fats! 

This treat is loaded with omega 3's, antioxidants, potassium, protein and various other vitamins and minerals. I hope you enjoy this as much as I do!

Spring Grapefruit Avocado Salad

INGREDIENTS
Salad:
  • 1 grapefruit
  • 1 avocado
  • 1 bag of spring salad mix
  • 1 handful of walnuts (presoaked, then dehydrated)
  • 1 handful of dried cranberries
Salad Dressing:
  • 1/3 avocado
  • 1/3 grapefruit

Making the Salad Dressing
Take 1/3 of an avocado one of those pieces of avocado and about a 1/3 of a grapefruit and put it in the blender. It makes an awesome salad dressing for this salad.

Making the Salad
  • Chop your lettuce. 
  • Then cut and slice your grapefruit and avocado into desired sizes, put on top of the bed of lettuce. 
  • Then sprinkle with walnuts and cranberries. 
  • Drizzle with salad dressing.
You have just created the most addictive salad known to mankind. Enjoy!

Green Watermelon Smoothie

Green Watermelon Smoothie
This is a simple smoothie to make. It's refreshing and surprisingly fulfilling too! I'm sure when you make it, you'll love it as much as I do!

INGREDIENTS
  • 3-4 cups watermelon
  • 2-3 cups kale (or) spinach
Makes about 25 oz 

Put everything in your Vitamix blender and blend into a juicy smoothie perfection!

This smoothie tastes like watermelon! It's really good. I used kale in mine, so you can taste the kale flavor a little bit, but it's not over bearing. I have also made it with spinach too. This is really a great way to sneak those greens in!

TIP:
If you do not like the taste of kale, use spinach instead. The smoothie will be green with absolutely zero greens in the flavor.

Raw Vegan Fettuchine Broccoli Alfredo (Warm!)


INGREDIENTS

Making the Pasta
  • Presoak your broccoli florets in water for an hour or two. I typically use warm water. Set it to the side.  
  • Optional: Peel the zucchinis. I typically peel mine, because I like for the pasta to look like the normal starchy pasta I grew up on. 
  • Take your spiralizer and attach the 2 zucchinis (one at a time) and spiralize them. 
  • After the zucchini is spiralized, I like to let mine sit in warm salt water with a little hemp oil. (adding the hemp oil is optional)
  • I often put the zucchini and the broccoli in the dehydrator in a lil water for about 30 mins to an hour. This will soften them and make them warm.
  • Take the zucchini and broccoli out, rinse them.
  • Mix the cheese in with the broccoli and zucchini.
  • Sprinkle the sundried tomato on top.
