Making Dried Tomatoes

Did you know you can dry your own fruits and veggies right at home? No more paying outrageous prices for dried goods. You can stock up and buy when its "in season" or "on sale"...and dry your own goods.

I dried tomatoes and here's what I did...

  1. Clean/Wash, as per the norm
  2. Chop into big chunks and pieces (remember this is going to shrink when its dried)
  3. Marinate for 30 mins (see below for marinade recipe)
  4. Place on the dehydrator - spreading it out so that air can circulate thoroughly throughout.
  5. Sprinkle a little more himilayan salt on top (optional)
  6. Turn your dehydrator on to 115 degrees. But not higher! Dehydrating higher than this is actually cooking/dehydrating the nutrients out! So be sure to go no higher than 115 degrees. Ever buy dried tomatoes and the color was not quite as vibrantly "red" as when fresh? Well now you know why! That's a sign that those dried goods have been dried so much that it has little to no nutrients and flavor left in it.
  7. Dehydrate as long as necessary. I left mine on for about 48 hours. You want to make sure they are totally dried. The last thing you want to do is store your dried goods, come back to it only to find out its molded! Make sure its dried, because if moisture is locked inside, it will mold and mildew.
  8. When they are ready, be sure to store it someplace cool, dark and dry.

*Marinade Mixture: 1 tbsp coconut oil, 1 tsp himilayan salt, water covering the tomatoes. Mix with hand or Vitamix Blender to make sure the oil, salt and water is not seperated but mixed well. Let it marinade for 30 mins - 1 hour.*

Dried Tomatoes in storage zip lock bag...you can also use bpa plastic containers or glass. Just be sure to store in a cool, dry place.
