Raw Organic Peanut Butter
Did you know...Peanuts aren't technically a nut. They're in the legume family. I don't eat a lot of peanuts...but every once in a while I miss the taste of peanut butter. So I came up with this recipe...

Before we get to the recipe, I feel the need to thoroughly inform you that: I think it might be impossible to have a purely "raw" peanut. Since they are typically blanched in the shell. The kind I buy are lightly blanched...not baked, boiled or anything else. The blanching is done, so I'm told, so that it will remove the reddish skin covering the kernels that come from the outer shell. Anyway...its the closest I've ever found to raw, that aside from picking peanuts freshly...which this city girl has never done. Here is a picture of the raw peanuts, so you'll know what they look like. 

Please Note: The color is a little lighter than if you were to crack open a shell and eat it right out the shell...why? Because even shelled peanuts are boiled and often baked for a very long period of time...thus making them "cooked" to extremities. The taste is also more "pure". The peanuty taste that you're use to, is not what you're going to get if you eat it raw. Hence my adding tahini to the peanut butter recipe. Eating a peanut raw you can really taste the undertones of its "legume" family.




One last thing...and I promise this is it and then we're off to the creamy peanut butter recipe...Don't decide to double this batch and make a whole lot and store it in your pantry! Remember peanuts go rancid quickly...so I wouldn't recommend that. In fact, i recommend storing this in the refrigerator until its all eaten. Notice the small batch I made? I made an amount that I knew I would eat rather quickly.

Now back to our regularly scheduled program...

INGREDIENTS:
  • 1 cup raw organic peanuts (pre-soaked)
  • 4-5 tbsp raw organic honey or raw blue agave
  • 1/2-1 tsp celtic sea salt (optional)
  • 2 tsp coconut oil (optional) 
  • 3-4 tbsp tahini (optional) 
  • 1/4-1/2 cup water as needed
MAKING THE PEANUT BUTTER
Place all of the ingredients into the Vitamix Blender. Blend and slowly add water (as needed). 

Yes! Making peanut butter is really that simple! It's fresh! It's organic! It has no gmo's! It has no preservatives! It has no germicides! It has no pesticides! And you made it right in your kitchen!
