I hope you all are fine and well! I've been seriously slacking on blogging recipes lately because I've been super busy. But that's no excuse cause I have to eat, right? RIGHT???? Yeah, I know, I have no excuses, except...
I've been really eating super simple meals and thought they were just too boring to bother to share...and if you follow me on facebook and twitter, then you know that I've also been eating out quite a bit too...*slaps hand---HARD!* But, no worries! I've had a major epiphany! This epiphany is to get me back on track as well as show you guys how simple some meals can be for those of us who think we just don't have the time to make a meal.
Here's a simple fruit salad I made last week...forgive the half eaten, unprofessional, non pretty photo. I took a pic as I was eating it and not before and it didn't dawn on me until a week later to actually post this on the blog, cause it just might help someone! Duh! (yes I can be a bit special at times) I promise to do better!
Simple Fruit Salad |
So here's the ingredients:
- 1 organic pineapple (core included-I eat the core of the pineapple, but its purely optional)
- 3 lbs of organic strawberries
- 1 pint of organic blueberries
- about a half cup of goji berries (dried)
- shredded coconut - to taste
Chop into desired sizes throw it all in a bowl, sprinkle with goji berries and coconut shavings, and voila! An awesome fruit salad! This was a large bowl full and I thought I would have it for breakfast every day of the week, but it only made it for 3 days.
TIP: If you're worried about putting the "dried" goji berries in with the soft fruit...don't be! They will soften from the pineapple and strawberry juices and will be just like they were not ever dried at all! Try it! You'll love it!
